Ingredients
For the Sandwich:
8 slices sourdough or artisan bread
4 oz white cheddar cheese, sliced or shredded
2 ripe peaches, thinly sliced
6 strips turkey bacon, cooked until crisp
2 tbsp honey
2 tbsp unsalted butter, softened
Pinch of black pepper (optional)
Instructions
Step 1: Prepare the Turkey Bacon
Cook the turkey bacon in a skillet over medium heat until crispy, about 4-5 minutes per side.
Drain on paper towels and set aside.
Step 2: Prep the Peaches and Cheese
Thinly slice the ripe peaches and cut the white cheddar into thin slices or shred it for better melting.
Warm the honey slightly (just a few seconds in the microwave) so it’s easy to drizzle.
Step 3: Assemble the Sandwiches
Lay out all 8 slices of bread.
On 4 slices, layer the white cheddar evenly.
Top with 2-3 slices of peach, 1-2 strips of turkey bacon, and a light drizzle of honey.
Sprinkle with a pinch of black pepper if desired.
Place the remaining bread slices on top to form sandwiches.
Step 4: Butter and Grill
Spread a thin layer of butter on the outside of each sandwich slice (top and bottom).
Heat a skillet or griddle over medium heat.
Place sandwiches on the skillet, pressing slightly with a spatula.
Grill for 3-4 minutes per side, until the bread is golden brown and the cheese is melted.
