Ingredients

Scale
  • 3 very ripe bananas, mashed

  • ½ cup honey

  • ½ cup melted butter or coconut oil

  • 2 large eggs

  • 1 tbsp vanilla extract

  • 1 ¾ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • ½ tsp cinnamon (optional, for warmth)

  • ½ cup chopped walnuts or chocolate chips (optional)

Instructions

Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C)
Grease or line a loaf pan with parchment paper

Step 2: Mix the Wet Ingredients
In a large bowl, mash the bananas with a fork until smooth
Whisk in honey, melted butter (or oil), eggs, and vanilla extract until well combined

Step 3: Add the Dry Ingredients
Sprinkle flour, baking soda, salt, and cinnamon over the wet ingredients
Stir just until everything is combined—do not overmix
Fold in nuts or chocolate chips if using

Step 4: Bake
Pour the batter into the prepared loaf pan and smooth the top
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean
Let cool in the pan for 10 minutes, then transfer to a rack to cool completely

Step 5: Slice & Serve
Slice thick or thin, depending on your mood
Enjoy warm or at room temperature, plain or with butter or nut butter

Notes

Use Overripe Bananas – The spottier, the sweeter and more flavorful
Don’t Overmix – Stir until just combined for a tender loaf
Customize – Add coconut, dried fruit, or swirl in peanut butter
Store Properly – Keeps moist for days when wrapped well
Make Muffins – Bake in a muffin tin at 350°F for 18–22 minutes
