Ingredients
- ½ Tbsp olive oil
- 2 jalapenos (ribs and seeds removed, diced)
- 1½ cups corn grits
- 1 tsp salt
- 3 cups low-sodium chicken stock
- 2 cups hot water
- 1 cup heavy cream
- 1½ cups shredded Pepper Jack cheese
- 16 oz. chicken chorizo
- 6 large eggs
- ½ cup queso fresco or crumbled feta cheese
- ¼ cup chopped fresh cilantro
- green onion (chopped)
- avocado (sliced)
Instructions
- In a large pot, bring chicken stock, hot water, and salt to a boil. Gradually whisk in corn grits, reduce heat to low, and stir until thickened (5–7 minutes).
- Stir in heavy cream and shredded cheese until melted.
- In a skillet, heat olive oil over medium heat. Sauté diced jalapenos until softened; add chicken chorizo and cook until browned.
- Fry eggs to your liking in another skillet.
- Assemble bowls with cheesy grits as the base, topped with chicken chorizo, eggs, queso fresco or feta, cilantro, green onions, and avocado slices.
