Ingredients

  • ½ Tbsp olive oil
  • 2 jalapenos (ribs and seeds removed, diced)
  • 1½ cups corn grits
  • 1 tsp salt
  • 3 cups low-sodium chicken stock
  • 2 cups hot water
  • 1 cup heavy cream
  • 1½ cups shredded Pepper Jack cheese
  • 16 oz. chicken chorizo
  • 6 large eggs
  • ½ cup queso fresco or crumbled feta cheese
  • ¼ cup chopped fresh cilantro
  • green onion (chopped)
  • avocado (sliced)

Instructions

  1. In a large pot, bring chicken stock, hot water, and salt to a boil. Gradually whisk in corn grits, reduce heat to low, and stir until thickened (5–7 minutes).
  2. Stir in heavy cream and shredded cheese until melted.
  3. In a skillet, heat olive oil over medium heat. Sauté diced jalapenos until softened; add chicken chorizo and cook until browned.
  4. Fry eggs to your liking in another skillet.
  5. Assemble bowls with cheesy grits as the base, topped with chicken chorizo, eggs, queso fresco or feta, cilantro, green onions, and avocado slices.
  6. Serve warm.
