Ingredients
- 3 lbs boneless skinless chicken thighs
- 1 cup pineapple juice
- ⅓ cup soy sauce
- ⅓ cup ketchup
- ¼ cup brown sugar
- 1 tbsp ginger paste
- 2 tbsp minced garlic
- 1½ tbsp sesame oil
- 2 tsp kosher salt
- ½ tsp black pepper
- ½ tsp onion powder
- 1 ½ tbsp Korean chili paste
Instructions
- In a large mixing bowl, combine pineapple juice, soy sauce, ketchup, brown sugar, ginger paste, minced garlic, sesame oil, salt, pepper, onion powder, and Korean chili paste.
- Reserve ½ cup of marinade for basting. Add chicken thighs to the remaining marinade and coat well. Cover and refrigerate for 24-48 hours.
- Preheat grill to medium-high heat (400-450°F) and brush grates with olive oil.
- Remove chicken from marinade and discard excess marinade. Grill chicken thighs for 4-6 minutes on each side until nearly cooked through.
- Baste with reserved marinade while grilling for added flavor.
- Cook an additional 3-5 minutes until internal temperature reaches 165°F (75°C).
- Let the chicken rest for a few minutes before serving.
