  • 3 lbs boneless skinless chicken thighs
  • 1 cup pineapple juice
  • ⅓ cup soy sauce
  • ⅓ cup ketchup
  • ¼ cup brown sugar
  • 1 tbsp ginger paste
  • 2 tbsp minced garlic
  • 1½ tbsp sesame oil
  • 2 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • 1 ½ tbsp Korean chili paste

Instructions

  1. In a large mixing bowl, combine pineapple juice, soy sauce, ketchup, brown sugar, ginger paste, minced garlic, sesame oil, salt, pepper, onion powder, and Korean chili paste.
  2. Reserve ½ cup of marinade for basting. Add chicken thighs to the remaining marinade and coat well. Cover and refrigerate for 24-48 hours.
  3. Preheat grill to medium-high heat (400-450°F) and brush grates with olive oil.
  4. Remove chicken from marinade and discard excess marinade. Grill chicken thighs for 4-6 minutes on each side until nearly cooked through.
  5. Baste with reserved marinade while grilling for added flavor.
  6. Cook an additional 3-5 minutes until internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for a few minutes before serving.
