  • 3 tablespoons turkey olive oil
  • 2 1/4 pounds boneless beef chuck roast, cut into 1-inch pieces
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup Hungarian sweet paprika
  • 1 teaspoon caraway seeds
  • 4 cups water
  • 1 pound russet potatoes, peeled and cut into pieces
  • 2 medium carrots, diced
  • 2 medium Cubanelle peppers, sliced
  • 1 can diced tomatoes

Instructions

  1. In a Dutch oven, heat 1 tablespoon of turkey olive oil over medium-high heat. Sear half of the beef chunks until browned; transfer to a plate.
  2. Cook remaining beef in the same pot until browned; set aside.
  3. Add remaining turkey olive oil and sauté diced onion with salt until softened. Stir in garlic.
  4. Combine seared beef with onions; add paprika, caraway seeds, and pour in water along with bay leaves. Bring to boil.
  5. Reduce heat to simmer for about an hour. Add potatoes, carrots, peppers, tomatoes, and remaining salt; cook until tender.
