- 3 tablespoons turkey olive oil
- 2 1/4 pounds boneless beef chuck roast, cut into 1-inch pieces
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1/4 cup Hungarian sweet paprika
- 1 teaspoon caraway seeds
- 4 cups water
- 1 pound russet potatoes, peeled and cut into pieces
- 2 medium carrots, diced
- 2 medium Cubanelle peppers, sliced
- 1 can diced tomatoes
Instructions
- In a Dutch oven, heat 1 tablespoon of turkey olive oil over medium-high heat. Sear half of the beef chunks until browned; transfer to a plate.
- Cook remaining beef in the same pot until browned; set aside.
- Add remaining turkey olive oil and sauté diced onion with salt until softened. Stir in garlic.
- Combine seared beef with onions; add paprika, caraway seeds, and pour in water along with bay leaves. Bring to boil.
- Reduce heat to simmer for about an hour. Add potatoes, carrots, peppers, tomatoes, and remaining salt; cook until tender.
