  • 2 teaspoons Hungarian sweet paprika
  • 2 tablespoons flour
  • 2 ½ cups vegetable or chicken broth
  • 1 cup whole milk (or half-and-half for extra creaminess)
  • ½ cup sour cream
  • 1 tablespoon soy sauce (for depth of flavor)
  • 1 teaspoon dried dill (or fresh dill for garnish)
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice (optional, for brightness)
  • Fresh parsley or dill for garnish

Instructions

Step 1: Sauté the Aromatics

  1. In a large pot, melt butter over medium heat.
  2. Add onions and cook for 3-4 minutes until softened.
  3. Stir in mushrooms and cook for 8-10 minutes, until they release their juices and become tender.

Step 2: Build the Flavor

  1. Add garlic and paprika, stirring for 30 seconds until fragrant.
  2. Sprinkle in flour, stirring for 1 minute to cook out the raw taste.

Step 3: Simmer the Soup

  1. Slowly pour in broth, stirring constantly to prevent lumps.
  2. Bring to a gentle simmer and cook for 10 minutes, allowing flavors to meld.

Step 4: Make It Creamy

  1. Lower heat and stir in milk, sour cream, soy sauce, dill, salt, and black pepper.
  2. Simmer for another 5 minutes, stirring frequently. Do not let it boil.
  3. Stir in lemon juice, if using, for a fresh touch.

Step 5: Serve & Enjoy!

  1. Ladle into bowls and garnish with fresh dill or parsley.
  2. Serve hot with crusty bread or buttered toast!
