Ingredients
- 3 tablespoons olive oil
- 2 pounds fresh asparagus spears
- 1 yellow onion, chopped
- 3 garlic cloves, chopped
- 1 teaspoon fresh thyme
- 4 cups chicken broth
- Zest and juice of 1 small lemon
- Salt and pepper to taste
Instructions
- Trim the woody ends off the asparagus and chop the remaining stalks.
