  • 4 Tbsp butter
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 ½ cups chicken broth
  • 1 cup uncooked parboiled rice
  • 8 oz sliced mushrooms
  • 1 tsp garlic powder
  • 1 tsp tabasco sauce
  • 1 tsp cajun seasoning (plus more to taste)
  • 1 green bell pepper, diced
  • 4 oz cream cheese
  • ¾ cup shredded cheddar or monterey jack cheese
  • 1 pound cooked chicken, diced

Instructions

  1. Set your Instant Pot to sauté mode. Melt the butter and add diced onions and celery; sauté for about 5 minutes until softened.
  2. Pour in the chicken broth, scraping the bottom of the pot to avoid sticking. Turn off the sauté function.
  3. Layer uncooked rice, sliced mushrooms, garlic powder, tabasco sauce, cajun seasoning, green bell pepper, and cream cheese on top without stirring.
  4. Secure the lid with the valve set to sealing. Cook on high pressure for 5 minutes. Allow natural pressure release for 5-10 minutes before venting.
  5. Gently stir in cooked chicken and shredded cheese until well combined. Adjust seasoning as needed before serving.
