  • 1 Tbsp olive oil
  • 1 cup diced onion
  • 3 large garlic cloves, minced
  • 3 ½ cups low sodium chicken broth
  • 1 (13 oz) package chicken chicken andouille sausage, sliced into ½ inch pieces
  • 12 cups sliced or quartered mushrooms
  • 1 pound uncooked cavatappi or penne pasta
  • 1 Tbsp Cajun seasoning
  • 1 (14.5 oz) can fire roasted tomatoes
  • 1 (8 oz) package cream cheese, softened
  • 1 bell pepper, cored and thinly sliced
  • 1 (12 oz) package frozen cooked shrimp – tail off, peeled, and deveined
  • 1 cup shredded or grated parmesan cheese

Instructions

  1. Set the Instant Pot to sauté mode. Once hot, add olive oil and diced onion; sauté for about 3 minutes. Stir in minced garlic for about 20 seconds.
  2. Add chicken sausage, mushrooms, uncooked pasta, Cajun seasoning, and fire-roasted tomatoes into the pot without stirring.
  3. Secure the lid and set the valve to sealing. Pressure cook for 4 minutes followed by a quick release.
  4. Carefully open the lid; stir in cream cheese, bell peppers, and frozen shrimp. Let sit on warm for about 5 minutes until heated through.
  5. Stir until cream cheese is blended; mix in parmesan cheese until melted.
  6. Serve warm and enjoy your hearty meal!
