Ingredients
- 1 Tbsp olive oil
- 1 cup diced onion
- 3 large garlic cloves, minced
- 3 ½ cups low sodium chicken broth
- 1 (13 oz) package chicken chicken andouille sausage, sliced into ½ inch pieces
- 1–2 cups sliced or quartered mushrooms
- 1 pound uncooked cavatappi or penne pasta
- 1 Tbsp Cajun seasoning
- 1 (14.5 oz) can fire roasted tomatoes
- 1 (8 oz) package cream cheese, softened
- 1 bell pepper, cored and thinly sliced
- 1 (12 oz) package frozen cooked shrimp – tail off, peeled, and deveined
- 1 cup shredded or grated parmesan cheese
Instructions
- Set the Instant Pot to sauté mode. Once hot, add olive oil and diced onion; sauté for about 3 minutes. Stir in minced garlic for about 20 seconds.
- Add chicken sausage, mushrooms, uncooked pasta, Cajun seasoning, and fire-roasted tomatoes into the pot without stirring.
- Secure the lid and set the valve to sealing. Pressure cook for 4 minutes followed by a quick release.
- Carefully open the lid; stir in cream cheese, bell peppers, and frozen shrimp. Let sit on warm for about 5 minutes until heated through.
- Stir until cream cheese is blended; mix in parmesan cheese until melted.
