Ingredients

  • Olive oil
  • Yellow onion
  • Garlic
  • Carrots
  • Long grain brown rice
  • Dijon mustard
  • Garlic powder
  • Italian seasoning
  • Chicken broth
  • Boneless skinless chicken breasts
  • Frozen peas
  • Fresh parsley (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in the Instant Pot on sauté mode; add chopped onion and cook until softened.
  2. Stir in minced garlic, then add carrots, brown rice, Dijon mustard, garlic powder, Italian seasoning, salt, pepper, and chicken broth; mix well.
  3. Place chicken breasts on top of the rice mixture.
