Description

Instant Pot Christmas Confetti Pasta is a festive delight that combines vibrant colors and flavors, making it the perfect centerpiece for holiday gatherings or quick weeknight dinners. This one-pot wonder features tender pasta, juicy chicken, and bright bell peppers, all cooked effortlessly in an Instant Pot. Ingredients

  • 2 cups water
  • 1 Tbsp Better than Bouillon chicken base
  • 2 Tbsp dry onion flakes
  • 1 tsp garlic powder
  • ¼ tsp kosher salt
  • ½ tsp oregano
  • ¼ tsp cayenne pepper
  • ¼ tsp black pepper
  • 8 ounces linguine or fettuccine
  • 1 pound frozen uncooked peeled and deveined chicken
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • ¼ cup olive oil
  • ½ cup shredded parmesan cheese (optional)

Instructions

  1. Add water, chicken base, onion flakes, garlic powder, salt, oregano, cayenne pepper, and black pepper to the Instant Pot. Stir to combine.
  2. Break the pasta in half and layer it crisscross in the pot.
  3. In a separate pot suitable for pot-in-pot cooking, place the frozen chicken on the bottom. Top with diced red and green bell peppers and drizzle with olive oil.
  4. Insert a tall trivet into the Instant Pot over the pasta and place the uncovered pot with chicken and peppers on top.
  5. Secure the lid and cook on manual/pressure cook for 6 minutes. Let sit for 5-10 minutes before releasing pressure.
  6. Combine everything in a large mixing bowl and mix in optional heavy cream and parmesan cheese until well combined.
