Ingredients
- 2 lbs chicken thighs (cut into 1–2 inch pieces)
- 1/3 cup low-sodium soy sauce
- 2 tablespoons sesame oil
- 1 can (20 oz) pineapple chunks (with juice)
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1/2 cup brown sugar
- 1/3 cup hoisin sauce
- 1 teaspoon red pepper flakes (optional)
- Green onions, sesame seeds, and slivered almonds for garnish
Instructions
- Open the pineapple can and set aside 1/4 cup of juice; add remaining juice and chunks to the Instant Pot.
- Add chicken, soy sauce, sesame oil, garlic, ginger, hoisin sauce, brown sugar, and red pepper flakes if desired. Stir to combine.
- Secure the lid on your Instant Pot and set it to cook on High Pressure for 4 minutes.
- Allow for a natural release for about 5 minutes before manually releasing any remaining pressure.
- Open the lid and stir. Select Sauté on LOW; mix cornstarch with reserved pineapple juice until smooth and add to the pot to thicken the sauce. Cook for a few more minutes until desired thickness is reached.
- Serve over rice or noodles, garnished with green onions, sesame seeds, and slivered almonds.
