Description

Ingredients

  • 2 lbs chicken thighs (cut into 12 inch pieces)
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons sesame oil
  • 1 can (20 oz) pineapple chunks (with juice)
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/2 cup brown sugar
  • 1/3 cup hoisin sauce
  • 1 teaspoon red pepper flakes (optional)
  • Green onions, sesame seeds, and slivered almonds for garnish

Instructions

  1. Open the pineapple can and set aside 1/4 cup of juice; add remaining juice and chunks to the Instant Pot.
  2. Add chicken, soy sauce, sesame oil, garlic, ginger, hoisin sauce, brown sugar, and red pepper flakes if desired. Stir to combine.
  3. Secure the lid on your Instant Pot and set it to cook on High Pressure for 4 minutes.
  4. Allow for a natural release for about 5 minutes before manually releasing any remaining pressure.
  5. Open the lid and stir. Select Sauté on LOW; mix cornstarch with reserved pineapple juice until smooth and add to the pot to thicken the sauce. Cook for a few more minutes until desired thickness is reached.
  6. Serve over rice or noodles, garnished with green onions, sesame seeds, and slivered almonds.
