  • 1 Tbsp olive oil
  • 1 medium onion, diced
  • 1 (12 oz) package beef smoked sausage, halved and sliced
  • 1 Tbsp minced garlic
  • 4 cups chicken broth
  • 1 pound Russet potatoes, peeled and cut into cubes
  • Fresh cracked pepper
  • 1 tsp smoked paprika
  • 1 (8 oz) can tomato sauce
  • 2 large kale leaves, stem removed and chopped
  • ¼ cup heavy cream

Instructions

  1. Set your Instant Pot to sauté mode. Add olive oil and diced onion; cook until softened (about 3 minutes). Stir in minced garlic and cook for another minute.
  2. Add sliced beef smoked sausage and sauté for 2-3 minutes until slightly browned. Mix in smoked paprika.
  3. Pour in chicken broth, followed by cubed Russet potatoes, fresh cracked pepper, and tomato sauce; stir to combine.
  4. Securely close the lid and set to high pressure for 4 minutes. Once done, perform a quick release of steam.
  5. Open the lid carefully and stir in chopped kale leaves until wilted. Finally, mix in heavy cream until well combined.
