- 1 Tbsp olive oil
- 1 medium onion, diced
- 1 (12 oz) package beef smoked sausage, halved and sliced
- 1 Tbsp minced garlic
- 4 cups chicken broth
- 1 pound Russet potatoes, peeled and cut into cubes
- Fresh cracked pepper
- 1 tsp smoked paprika
- 1 (8 oz) can tomato sauce
- 2 large kale leaves, stem removed and chopped
- ¼ cup heavy cream
Instructions
- Set your Instant Pot to sauté mode. Add olive oil and diced onion; cook until softened (about 3 minutes). Stir in minced garlic and cook for another minute.
- Add sliced beef smoked sausage and sauté for 2-3 minutes until slightly browned. Mix in smoked paprika.
- Pour in chicken broth, followed by cubed Russet potatoes, fresh cracked pepper, and tomato sauce; stir to combine.
