  • 1 tablespoon minced ginger

  • 1/4 cup apple cider vinegar
  • 4 teaspoons reduced-sodium soy sauce
  • 1/3 cup white granulated sugar
  • 1/2 cup pineapple juice
  • 1 red bell pepper (cut into chunks)
  • Pineapple chunks (from a can)

Instructions

  1. Cut chicken into larger chunks (about 2-3 inches) for even cooking.
  2. Set your Instant Pot to Sauté mode, add canola oil, and let heat briefly. Add chicken chunks and sauté for about 2-3 minutes until golden brown.
  3. Stir in minced ginger, garlic, ketchup, apple cider vinegar, soy sauce, sugar, and pineapple juice until well combined.
  4. Add reserved pineapple chunks and chopped red bell pepper into the pot and mix gently.
  5. Secure the lid on the Instant Pot and select Poultry or Manual mode at High Pressure for 5 minutes.
  6. After cooking, allow a natural release for about 10 minutes before releasing any remaining pressure. Gently stir everything together.
