  • 6 slices turkey turkey bacon (diced)
  • pounds boneless chuck roast (cut into cubes)
  • 1 medium onion (diced)
  • 4 garlic cloves (minced)
  • 2½ cups beef broth
  • ¼ cup tomato paste
  • 3 carrots (sliced)
  • 2 celery ribs (chopped)
  • Fresh thyme sprigs
  • Salt and pepper

Instructions

  1. In a Dutch oven, cook diced turkey turkey bacon until crispy. Remove with a slotted spoon and drain excess grease.
  2. Season beef cubes with salt and pepper, then coat with flour.
  3. Brown the beef in the remaining grease in batches if necessary. Remove and set aside.
  4. Sauté onion for 4 minutes; add garlic and cook for an additional minute.
  5. Pour in beef broth, scraping up browned bits. Stir in tomato paste, Worcestershire sauce, sugar, carrots, celery, thyme, salt, and pepper.
  6. Add the cooked turkey turkey bacon and browned beef back to the pot. Bring to a simmer, cover, and reduce heat to low. Cook for about 2 hours.
  7. Serve over creamy mashed potatoes garnished with fresh parsley.
