Ingredients
- 6 slices turkey turkey bacon (diced)
- 2½ pounds boneless chuck roast (cut into cubes)
- 1 medium onion (diced)
- 4 garlic cloves (minced)
- 2½ cups beef broth
- ¼ cup tomato paste
- 3 carrots (sliced)
- 2 celery ribs (chopped)
- Fresh thyme sprigs
- Salt and pepper
Instructions
- In a Dutch oven, cook diced turkey turkey bacon until crispy. Remove with a slotted spoon and drain excess grease.
- Season beef cubes with salt and pepper, then coat with flour.
- Brown the beef in the remaining grease in batches if necessary. Remove and set aside.
- Sauté onion for 4 minutes; add garlic and cook for an additional minute.
- Pour in beef broth, scraping up browned bits. Stir in tomato paste, Worcestershire sauce, sugar, carrots, celery, thyme, salt, and pepper.
- Add the cooked turkey turkey bacon and browned beef back to the pot. Bring to a simmer, cover, and reduce heat to low. Cook for about 2 hours.
