  • 3 cups elbow macaroni
  • 2 cans evaporated milk (12 ounces each)
  • 1/3 cup skim milk
  • 2 large eggs
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon garlic powder
  • 16 ounces extra-sharp cheddar cheese, grated
  • 8 ounces Monterey Jack cheese, grated
  • Paprika, coarse salt, and black pepper

Instructions

  1. Preheat oven to 375°F. Butter a 9-by-13-inch glass baking dish.
  2. Boil salted water in a large pot and cook elbow macaroni until al dente. Drain and return to the pot.
  3. Add butter to the hot macaroni and toss until melted.
  4. In a medium bowl, whisk together evaporated milk, skim milk, eggs, seasoned salt, garlic powder, coarse salt, and pepper.
  5. In another bowl, mix both cheeses.
  6. Layer half the macaroni in the baking dish followed by half the cheese mixture; repeat layers.
  7. Pour the milk mixture over everything and sprinkle with paprika.
  8. Bake for 35 to 45 minutes until golden brown on top. Let cool for 10-15 minutes before serving.
