Ingredients
For the Soup:

1 tbsp olive oil

1 lb ground beef (or ground turkey for a lighter version)

1 small yellow onion, diced

3 cloves garlic, minced

1 tsp salt

½ tsp black pepper
-
1 tsp dried oregano
-
1 tsp dried basil
-
½ tsp crushed red pepper flakes (optional)

2 tbsp tomato paste
-
1 can (28 oz) crushed tomatoes

1 can (15 oz) diced tomatoes

4 cups low-sodium beef or vegetable broth
-
1½ cups water

8 lasagna noodles, broken into bite-sized pieces

1 bay leaf
For the Cheese Topping:

1 cup ricotta cheese
-
½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Salt and black pepper to taste

1 tbsp fresh parsley, chopped (optional)
For Garnish:

Extra shredded mozzarella

Fresh basil or parsley

Red pepper flakes (optional)
Instructions
Step 1: Brown the Meat

Heat olive oil in a large pot over medium heat.

Add ground beef and cook for 5–6 minutes, breaking it apart until browned.

Add the diced onion and sauté for 3–4 minutes until soft.

Stir in garlic and cook for 1 more minute until fragrant.
Step 2: Add Seasonings and Tomatoes

Season with salt, black pepper, oregano, basil, and red pepper flakes.

Stir in the tomato paste and cook for 1–2 minutes to deepen the flavor.

Pour in crushed tomatoes, diced tomatoes, broth, and water.

Add the bay leaf and stir to combine.
Step 3: Simmer with Pasta

Bring the soup to a boil, then add the broken lasagna noodles.

Reduce heat to medium-low and simmer uncovered for 15–20 minutes, stirring occasionally, until the pasta is tender.

Remove the bay leaf once cooking is complete.
Step 4: Mix the Cheese Topping

In a small bowl, combine ricotta, mozzarella, Parmesan, salt, black pepper, and parsley (if using).

Stir until well mixed and creamy. This will be dolloped on top just before serving.
Step 5: Serve & Garnish

Ladle the hot soup into bowls.
