- 1 pound cod fillets
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter
- 3 cloves garlic (minced)
- ¼ teaspoon red pepper flakes
- ¼ cup dry white grape juice
- 2 cups cherry tomatoes
- ½ cup kalamata olives
- ¼ cup lemon juice
- 2 tablespoons fresh parsley (chopped)
- 2 sprigs thyme
Instructions
- Preheat your oven to 400°F.
- Season the cod fillets with salt and pepper; drizzle olive oil in a baking dish and place the fillets inside. Cover with aluminum foil and bake for 12 minutes.
