  • 2 sticks celery (chopped finely)
  • 2 medium carrots (peeled & chopped finely)
  • 1/2 medium onion (chopped)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1.5 pounds uncooked chicken breasts
  • 1 cup uncooked orzo
  • 1 tablespoon lemon juice
  • Fresh parsley (to taste)
  • Salt & pepper (to taste)

Instructions

  1. In a large soup pot, sauté the celery, carrots, and onions in butter and olive oil over medium-high heat for about 5-7 minutes until softened.
  2. Add the minced garlic and cook for an additional 30 seconds. Stir in the flour and cook for another minute until lightly golden.
  3. Gradually pour in the chicken broth, stirring continuously until the flour dissolves. Add the chicken and Italian seasoning; bring to a boil.
  4. Reduce heat, cover slightly ajar, and let simmer for 15 minutes.
  5. Stir in the orzo and continue cooking for another 10 minutes or until tender.
  6. Remove chicken from the pot, shred it into pieces, return it to the pot, then add lemon juice and parsley. Season with salt and pepper to taste.
