  • 8 ounces linguine pasta
  • 2 tablespoons olive oil
  • 6 tablespoons butter (divided)
  • 4 cloves garlic (minced)
  • 1 teaspoon red pepper flakes
  • 1 ¼ pounds large shrimp
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 cups baby spinach
  • ½ cup parmesan cheese (grated)
  • 2 tablespoons parsley (chopped)
  • 1 tablespoon lemon juice

Instructions

  1. Cook the linguine in boiling water according to package directions; drain and set aside.
  2. In the same pot, heat olive oil and 2 tablespoons of butter over medium heat. Add minced garlic and red pepper flakes; cook until fragrant.
  3. Add shrimp seasoned with salt, pepper, and Italian seasoning; cook until pink (3–4 minutes). Stir in baby spinach until wilted.
  4. Return drained pasta to the pot with remaining butter, parmesan cheese, and parsley; mix well until combined.
  5. Finish by adding fresh lemon juice; toss everything together before serving.
