- 4 lobster tails
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 onion (finely chopped)
- 2 carrots (peeled and finely chopped)
- 2 stalks celery (finely chopped)
- 4 cloves garlic (minced)
- 1 teaspoon chicken bouillon powder
- 3 tablespoons all-purpose flour
- 1 1/4 cup dry white grape juice (or apple juice)
- 4 cups lobster stock
- 3/4 – 1 cup heavy cream
Instructions
- Boil water in a large pot and cook lobster tails for about 5–7 minutes until bright red. Remove, cool slightly, and chop the meat into bite-sized pieces.
- In the same pot, melt butter with olive oil over medium heat. Sauté onion, carrots, and celery for about 5 minutes until softened. Stir in garlic along with thyme and tarragon.
- Add chicken bouillon powder, salt, cracked pepper, cayenne pepper, and tomato paste; cook for another couple of minutes to combine flavors.
- Sprinkle flour over the mixture while stirring continuously for about 2 minutes to eliminate any raw flour taste.
- Pour in grape juice or apple juice to deglaze the pot, scraping any bits stuck at the bottom.
- Gradually add lobster stock while stirring. Bring to a boil and then reduce heat to simmer for about 30 minutes.
- Blend the mixture until smooth using an immersion blender or regular blender.
- Stir in heavy cream along with additional butter and minced garlic; warm through without boiling.
- Taste and adjust seasonings as needed before serving hot.
