  • 4 lobster tails
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 onion (finely chopped)
  • 2 carrots (peeled and finely chopped)
  • 2 stalks celery (finely chopped)
  • 4 cloves garlic (minced)
  • 1 teaspoon chicken bouillon powder
  • 3 tablespoons all-purpose flour
  • 1 1/4 cup dry white grape juice (or apple juice)
  • 4 cups lobster stock
  • 3/41 cup heavy cream

Instructions

  1. Boil water in a large pot and cook lobster tails for about 5–7 minutes until bright red. Remove, cool slightly, and chop the meat into bite-sized pieces.
  2. In the same pot, melt butter with olive oil over medium heat. Sauté onion, carrots, and celery for about 5 minutes until softened. Stir in garlic along with thyme and tarragon.
  3. Add chicken bouillon powder, salt, cracked pepper, cayenne pepper, and tomato paste; cook for another couple of minutes to combine flavors.
  4. Sprinkle flour over the mixture while stirring continuously for about 2 minutes to eliminate any raw flour taste.
  5. Pour in grape juice or apple juice to deglaze the pot, scraping any bits stuck at the bottom.
  6. Gradually add lobster stock while stirring. Bring to a boil and then reduce heat to simmer for about 30 minutes.
  7. Blend the mixture until smooth using an immersion blender or regular blender.
  8. Stir in heavy cream along with additional butter and minced garlic; warm through without boiling.
  9. Taste and adjust seasonings as needed before serving hot.
