  • 1 1/4 lb lean ground beef
  • 1 cup bread crumbs
  • 2 large eggs
  • 1 small white onion, diced
  • 2 tsp garlic powder
  • 2 tsp dried parsley
  • 1 tsp Italian seasoning
  • 1/2 cup honey barbecue sauce
  • 1 cup creamy mac and cheese
  • 1 cup shredded mozzarella
  • 1/3 cup ketchup
  • 2 tbsp brown sugar
  • 2 tbsp yellow mustard
  • 1 tbsp honey

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine ground beef, bread crumbs, eggs, diced onion, garlic powder, parsley, Italian seasoning, salt, and pepper. Mix well.
  3. Shape half of the mixture into a loaf on a baking sheet.
  4. Spread the mac and cheese evenly over the center.
  5. Top with the remaining meat mixture and seal the edges.
  6. In a separate bowl, mix ketchup, brown sugar, mustard, and honey; spread over the meatloaf.
  7. Bake for approximately 50 minutes until internal temperature reaches 160°F (70°C).
  8. During the last five minutes of baking, sprinkle mozzarella on top to melt.
  9. Let rest for about 10 minutes before slicing.
