Ingredients

  • ½ cup mascarpone cheese (room temperature)

  • 3 large eggs (separated)

  • 1 tsp cream of tartar

  • ¼ tsp salt

  • 1 tsp baking powder

  • 1 tbsp olive oil (or melted butter)

  • 1 tbsp honey (optional, for a slightly sweet flavor)


Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or grease it lightly with cooking spray.

Step 2: Separate the Eggs

  • Carefully separate the egg yolks from the egg whites, placing the whites into one bowl and the yolks into another.

Step 3: Mix the Mascarpone Mixture

  • In the bowl with the egg yolks, add the mascarpone cheese, olive oil (or melted butter), and honey (if using).

  • Use a whisk or an electric mixer to blend until the mixture is smooth and creamy. Add the baking powder and salt and mix again until fully combined.

Step 4: Beat the Egg Whites

  • In the separate bowl with the egg whites, add the cream of tartar and beat with an electric mixer on high speed until stiff peaks form. This will take about 3-5 minutes.

Step 5: Combine the Mixtures

  • Gently fold the egg whites into the mascarpone mixture using a silicone spatula. Be careful not to deflate the egg whites too much, as they are what give the bread its light, airy texture. Fold until just combined.

Step 6: Shape the Bread

  • Spoon the batter onto the prepared baking sheet, forming 6-8 mounds (depending on your desired size). Use the back of a spoon to smooth the tops of the mounds to form round, flat “buns.”

Step 7: Bake

  • Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the cloud bread is golden brown on top and firm to the touch.

Step 8: Cool and Serve

 

  • Remove the cloud bread from the oven and let it cool on a wire rack. Once cooled, it’s ready to serve! Enjoy it as a sandwich bread or snack with your favorite toppings.

Notes

Use Room Temperature Mascarpone: This helps the mascarpone blend smoothly into the batter for a creamier texture.

Don’t Overmix: When folding the egg whites into the mascarpone mixture, do it gently to maintain the airy texture.

Adjust Sweetness: If you prefer a sweeter cloud bread, you can increase the honey to 2 tablespoons or add a little sweetener of your choice.

 

Store Properly: Store any leftover cloud bread in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
