Ingredients

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 egg (for binding)
  • 2 tablespoons flour (or more, depending on consistency)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (for coating)
  • Chopped parsley (optional, for garnish)
  • Ketchup or dipping sauce (optional, for serving)

Instructions

Step 1: Prepare the Mashed Potatoes

If using leftover mashed potatoes, make sure they’re not too creamy. If they are, add a little flour to thicken. If making fresh, allow the potatoes to cool slightly before proceeding.

Step 2: Mix Ingredients

In a large bowl, combine the mashed potatoes, egg, flour, garlic powder, onion powder, salt, and pepper. Mix until the ingredients come together into a thick, dough-like consistency.

Step 3: Shape the Fries

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Take a spoonful of the mashed potato mixture and roll it into a long, thin log shape (like a fry). Place the shaped fries on the prepared baking sheet, leaving a little space between each one.

Step 4: Coat and Bake

Brush the tops of the fries with olive oil to help them crisp up while baking.
Bake for 20-25 minutes, flipping halfway through until the fries are golden and crispy on the outside.

Step 5: Garnish and Serve

Once they’re baked to perfection, remove from the oven and sprinkle with fresh chopped parsley for a pop of color. Serve warm with ketchup or your favorite dipping sauce!

Notes

  • Consistency: If the mashed potatoes are too loose, add more flour until the mixture can hold its shape.
  • Flavored Fries: You can customize the flavor by adding cheese, bacon bits, or herbs into the mashed potatoes.
  • Air Fryer Option: For a quicker alternative, cook the fries in an air fryer at 375°F for about 12-15 minutes, flipping halfway.
