Ingredients

For the Filling:
1 tbsp olive oil
2 garlic cloves, minced
4 cups fresh spinach (or 1 cup frozen, thawed and squeezed dry)
½ cup crumbled feta cheese
¼ cup ricotta cheese or cream cheese (optional, for creaminess)
1 tsp dried oregano or dill
Salt and black pepper, to taste

For the Pastry:
1 sheet puff pastry, thawed (store-bought or homemade)
1 egg (for egg wash)
1 tbsp water

Optional Toppings:
Sesame seeds
Nigella seeds
Fresh parsley, for garnish


Instructions

Step 1: Make the Filling
Heat olive oil in a skillet over medium heat.
Add garlic and cook for 30 seconds until fragrant.
Add fresh spinach and sauté until wilted. If using frozen, just warm through.
Remove from heat and let cool slightly.
In a bowl, mix the spinach with crumbled feta, ricotta (if using), oregano or dill, and season with salt and pepper to taste.

Step 2: Prepare the Pastry
Preheat oven to 400°F (200°C).
Roll out puff pastry on a lightly floured surface.
Cut into squares or circles, about 3–4 inches in size depending on desired portion.

Step 3: Fill and Fold
Place a spoonful of spinach-feta mixture in the center of each piece.
Fold into triangles or seal with another piece of pastry, pressing edges with a fork.
Place on a parchment-lined baking sheet.

Step 4: Egg Wash & Bake
Beat the egg with 1 tbsp water and brush over each crisp for a golden finish.
Sprinkle with sesame or nigella seeds if using.
Bake for 15–20 minutes or until puffed and golden brown.

 

Step 5: Cool & Serve
Let cool slightly before serving. Garnish with chopped parsley if desired. Serve warm or at room temperature.

Notes

Don’t Overfill – Too much filling can cause leaks.
Seal Well – Press edges firmly to keep everything inside.
Use Fresh or Frozen Spinach – Just make sure it’s dry to avoid soggy pastry.
Try Phyllo Dough – For a lighter, crispier variation (brush each layer with olive oil or butter).
Add Flavor – Sun-dried tomatoes, olives, or chopped scallions make tasty additions.
