Ingredients
- 2 cups cooked, cubed chicken
- 2 cups cooked white rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10.5 oz) diced tomatoes with green chiles
- 1 cup corn kernels
- 1 cup salsa
- 1 can (10.5 oz) cream of chicken soup
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups shredded cheese (Sharp Cheddar and Monterey Jack)
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, combine cooked chicken, rice, black beans, diced tomatoes, corn, salsa, cream of chicken soup, cumin, chili powder, garlic powder, salt, and pepper.
- Mix well until combined.
- In another bowl, combine shredded cheeses; set aside half for topping.
- Stir half of the cheese mix and cilantro into the chicken mixture.
- Pour into the baking dish and spread evenly. Top with remaining cheese.
- Bake for 15-20 minutes until heated through and cheese is bubbly.
- Let cool for about 5 minutes before serving.
