  • 2 cups cooked, cubed chicken
  • 2 cups cooked white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10.5 oz) diced tomatoes with green chiles
  • 1 cup corn kernels
  • 1 cup salsa
  • 1 can (10.5 oz) cream of chicken soup
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups shredded cheese (Sharp Cheddar and Monterey Jack)
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, combine cooked chicken, rice, black beans, diced tomatoes, corn, salsa, cream of chicken soup, cumin, chili powder, garlic powder, salt, and pepper.
  3. Mix well until combined.
  4. In another bowl, combine shredded cheeses; set aside half for topping.
  5. Stir half of the cheese mix and cilantro into the chicken mixture.
  6. Pour into the baking dish and spread evenly. Top with remaining cheese.
  7. Bake for 15-20 minutes until heated through and cheese is bubbly.
  8. Let cool for about 5 minutes before serving.
