  • 4 cups cooked, shredded chicken
  • 1 oz taco seasoning
  • 19 oz can of red enchilada sauce
  • 4 oz can of diced chilies
  • 1/4 cup sour cream
  • 8 oz shredded sharp cheddar cheese
  • 8 oz shredded pepper jack cheese
  • 16 taco-sized flour tortillas
  • 12 cups vegetable oil (for frying)
  • 16 oz can of refried beans
  • Diced tomatoes and sliced green onions (for garnish)

Instructions

  1. In a mixing bowl, combine shredded chicken, taco seasoning, half of the enchilada sauce, diced chilies, sour cream, and one cup of mixed cheese.
  2. Heat oil in a large frying pan over medium-high heat. Fry each tortilla until golden brown on both sides; drain on paper towels.
  3. Assemble the pizzas by spreading refried beans on each tortilla followed by the chicken mixture and more cheese; top with another tortilla.
  4. Bake at 400°F for about 10 minutes after spreading enchilada sauce and additional cheese on top.
  5. Garnish with diced tomatoes and green onions before serving.
