For the Base:

  • 4 large flour tortillas

  • 1 tbsp vegetable oil (for brushing)

For the Filling:

  • ½ lb ground beef or ground chicken

  • 1 tbsp taco seasoning

  • ½ cup water

  • 1 cup refried beans (canned or homemade)

For the Topping:

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • ½ cup diced tomatoes

  • ¼ cup sliced black olives (optional)

  • 2 tbsp chopped green onions

  • ¼ cup diced red onion

  • ¼ cup taco sauce or salsa

Optional Toppings:

  • Sour cream

  • Guacamole

  • Jalapeño slices

  • Shredded lettuce

  • Cilantro


Instructions

Step 1: Prepare the Tortillas
Preheat oven to 400°F (200°C).
Place tortillas on a baking sheet lined with parchment paper.
Lightly brush both sides of each tortilla with vegetable oil.
Bake for 4-5 minutes on each side until golden and crisp. Remove and set aside.

Step 2: Cook the Meat
In a skillet over medium heat, cook ground beef or chicken until browned, breaking it up with a spatula.
Drain excess fat if needed.
Add taco seasoning and water. Stir well and simmer for 5 minutes until the liquid reduces. Set aside.

Step 3: Heat the Refried Beans
In a small saucepan, warm the refried beans over low heat, stirring occasionally until smooth and heated through.
You can add a tablespoon of water if they’re too thick.

Step 4: Assemble the Mexican Pizzas
Spread a layer of warm refried beans over two of the crispy tortillas.
Top with the cooked meat.
Place another tortilla on top of each to form a stack.
Spread taco sauce or salsa over the top tortilla.
Sprinkle evenly with cheddar and mozzarella cheeses.
Add diced tomatoes, red onion, and black olives.

Step 5: Bake & Finish
Place the assembled pizzas back on the baking sheet.
Bake for 6–8 minutes, or until the cheese is melted and bubbly.
Remove from oven and let rest for 2–3 minutes.
Sprinkle with chopped green onions and any additional toppings like sour cream or guacamole.

Step 6: Slice & Serve
Cut each pizza into quarters using a sharp knife or pizza cutter.
Serve hot with extra salsa, guacamole, or sour cream on the side.

Notes

Bake Tortillas First – This keeps them crisp and prevents sogginess.
Don’t Overload – Too many toppings can make the pizza fall apart.
Use Two Layers – The top and bottom tortilla give structure and great texture.
Customize – Add cooked bell peppers, corn, or swap beans for mashed avocado.
Add Heat – Use spicy salsa, hot taco sauce, or jalapeños for a kick.
