Instructions

  3. In a microwave-safe glass measuring cup, combine sugar, water, corn syrup, and salt; heat on high for about 4 minutes before stirring.
  4. Continue heating in increments while monitoring the temperature until it reaches 260°F (hard ball stage).
  5. Beat egg whites on medium speed until stiff peaks form as syrup nears completion.
  6. Gradually pour hot syrup into the beaten egg whites while mixing on high speed.
  7. Beat for another 15-20 minutes until mixture loses gloss and holds its shape.
  8. Stir in pecans and vanilla quickly.
  9. Scoop rounded teaspoons of the mixture onto the prepared baking sheet.
  10. Allow candy to dry at room temperature until set.
