  • 24 chocolate sandwich cookies (crushed)
  • 6 tablespoons unsalted butter (melted)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • 2 cups whole milk
  • ¼ cup cornstarch
  • 4 ounces semi-sweet chocolate (finely chopped)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix crushed cookies with melted butter until well combined.
  2. Press the mixture into the bottom of a 9-inch pie pan and bake for about 10 minutes. Let cool.
  3. For the brownie layer, whisk together sugar, eggs, and vanilla in another bowl. Add cocoa powder, flour, and mix until combined. Pour over the cooled crust.
  4. Bake for about 20 minutes or until set but slightly gooey in the center. Cool completely.
  5. For the pudding layer, heat milk, sugar, cornstarch, cocoa powder, and egg yolks in a saucepan until thickened. Stir in chopped chocolate until smooth.
  6. Pour pudding over the cooled brownie layer and refrigerate for at least three hours.
  7. Whip cream with powdered sugar and vanilla until stiff peaks form; spread on top of chilled pie before serving.
