  • 2 cups rhubarb, thinly sliced
  • 1 cup raspberries
  • 1 cup blackberries
  • 1 cup blueberries
  • 1 1/2 cups strawberries, sliced
  • Zest of 1 orange
  • 4 tbsp cornstarch
  • 1 cup sugar
  • 8 tbsp butter
  • 1 1/4 cup rolled oats
  • 1/3 cup brown sugar
  • 1/2 tsp kosher salt
  • 3/4 cup gluten-free flour or all-purpose flour
  • 1/4 tsp cinnamon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place a baking sheet on the bottom rack to catch any spills.
  3. In a large mixing bowl, combine rhubarb, berries, orange zest, cornstarch, and sugar until well mixed.
  4. Pour the berry-rhubarb mixture into the prepared pie crust.
  5. In another bowl, mix the streusel topping ingredients until it resembles coarse sand.
  6. Sprinkle the crumb topping evenly over the filling.
  7. Bake for approximately 45 minutes until golden brown; cover with foil if browning too quickly.
  8. Allow cooling at room temperature for one hour before refrigerating for at least eight hours before serving.
