  • 1 1/2 tbsp lemon juice
  • 1 1/4 tsp vanilla extract
  • 1 1/2 tbsp poppy seeds
  • 150 g powdered sugar
  • 45 tsp lemon juice
  • 1/2 tsp sour cream (to thicken the glaze, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat room temperature butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition; then stir in sour cream.
  5. Mix in vegetable oil, lemon zest, and vanilla extract until combined.
  6. Gradually add dry ingredients to wet ingredients while mixing on low speed; fold in poppy seeds gently.
  7. Pour batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick inserted comes out clean.
  8. Let cool for about 10 minutes in the pan before transferring to a cooling rack.
  9. Prepare icing by mixing powdered sugar with lemon juice; drizzle over the cooled cake.
