For the Nutella Filling:

  • ½ cup Nutella (or other chocolate hazelnut spread)

For the Chocolate Cookie Dough:

  • ½ cup unsalted butter, softened

  • ½ cup brown sugar (packed)

  • ¼ cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • ½ cup unsweetened cocoa powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ¾ cup semi-sweet chocolate chips


Instructions

Step 1: Prep the Nutella Centers

  1. Line a small tray with parchment paper.

  2. Scoop out 12 small dollops of Nutella (about 1 tsp each) and place them on the tray.

  3. Freeze for at least 30 minutes, or until solid. This step makes stuffing the cookies easy and mess-free.

Step 2: Make the Cookie Dough

  1. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).

  2. Beat in the egg and vanilla extract until smooth.

  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.

  4. Gradually mix the dry ingredients into the wet mixture until fully combined.

  5. Fold in the chocolate chips.

  6. Chill the dough in the refrigerator for 20–30 minutes to firm up (makes it easier to shape).

Step 3: Assemble the Cookies

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Scoop about 2 tablespoons of cookie dough and flatten it slightly in your hand.

  3. Place a frozen Nutella center in the middle and wrap the dough around it, sealing completely.

  4. Roll gently into a ball and place on the baking sheet.

  5. Repeat with remaining dough and Nutella centers, spacing cookies about 2 inches apart.

Step 4: Bake and Cool

  1. Bake for 10–12 minutes, or until the edges are set but the centers look slightly soft.

  2. Let cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack.
