  • 2.5 cups elbow macaroni
  • 10 oz can Rotel (undrained)
  • 8 oz can tomato sauce
  • 1 tbsp minced garlic
  • 2 cups shredded Colby Jack cheese
  • 1/2 cup milk
  • Fresh cilantro for garnish

Instructions

  1. Heat a large skillet over medium heat and add oil, chicken, and onion.
  2. Season with salt, pepper, chili powder, cumin, and cilantro; cook until chicken is nearly done.
  3. Stir in garlic, macaroni, chicken broth, Rotel, and tomato sauce; bring to a boil.
