- 12 oz beef sausage, sliced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (red, yellow, or green)
- 2 teaspoons Cajun seasoning (adjust for spice level)
- ½ teaspoon smoked paprika
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 2 cups chicken broth (or beef broth for deeper flavor)
- 1 cup heavy cream (or half-and-half for a lighter option)
- 1 (14 oz) can diced tomatoes (drained)
- 8 oz penne or rigatoni pasta
- ½ cup grated Parmesan cheese
- 1 cup shredded cheddar cheese
- 1 tablespoon chopped fresh parsley (for garnish)
Optional Add-ins:
- ½ teaspoon crushed red pepper flakes (for extra heat)
- 1 cup baby spinach (for added greens)
- ½ cup cooked mushrooms (for extra umami)
Instructions
Step 1: Cook the Sausage & Veggies
- Heat olive oil in a large skillet over medium heat.
- Add sliced beef sausage and cook for 3-4 minutes, until browned.
- Stir in onions, garlic, and bell peppers, sautéing until softened (about 3 minutes).
Step 2: Add Seasonings & Liquids
- Sprinkle in Cajun seasoning, smoked paprika, salt, and black pepper, stirring to coat.
- Pour in chicken broth, heavy cream, and diced tomatoes. Stir well.
Step 3: Cook the Pasta
- Add uncooked pasta, ensuring it is submerged in the liquid.
- Bring to a simmer, cover, and cook for 12-15 minutes, stirring occasionally, until pasta is tender.
Step 4: Make It Creamy & Cheesy
- Once pasta is cooked, stir in Parmesan and cheddar cheese, mixing until melted.
- If using, add baby spinach and let wilt for 1-2 minutes.
Step 5: Serve & Enjoy!
- Garnish with fresh parsley and serve warm.

Notes
- Use a Heavy-Bottomed Pan – Prevents sticking and ensures even cooking.
