Ingredients
1 ½ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ cup creamy peanut butter
¼ cup brown sugar (or honey or maple syrup)
1 large egg
1 cup milk (any kind—dairy or plant-based)
1 teaspoon vanilla extract (optional)
Optional Add-Ins:
½ cup chocolate chips or chopped nuts
½ banana, mashed (for extra moisture)
2 tablespoons jam or jelly, swirled on top before baking
Instructions
Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C)
Grease your loaf pan or line it with parchment paper
Step 2: Mix the Wet Ingredients
In a large mixing bowl, whisk together peanut butter, brown sugar (or sweetener), egg, milk, and vanilla extract until smooth
Step 3: Add Dry Ingredients
Add flour, baking powder, and salt to the bowl
Stir until just combined—do not overmix
Fold in chocolate chips, nuts, or banana if using
Step 4: Pour and Bake
Pour batter into the prepared loaf pan
Smooth the top with a spatula
Optional: Swirl jam into the top for a fruity twist
Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean
Step 5: Cool and Slice
Let the bread cool in the pan for 10 minutes
Transfer to a wire rack to cool completely before slicing
Notes
Use smooth peanut butter – Natural or conventional both work, but avoid overly oily brands
Don’t overmix – Mix just until the batter comes together to avoid a dense texture
Let it cool – Slicing too soon can cause it to fall apart
Make it your own – Add cinnamon, cocoa powder, or a nut butter swirl
Toast leftovers – It tastes amazing warmed up with a drizzle of honey
