Ingredients
½ cup unsalted butter, melted
½ cup creamy peanut butter
¾ cup brown sugar, packed
¼ cup granulated sugar
1 large egg
1 tsp vanilla extract
1 cup all-purpose flour
½ tsp baking soda
¼ tsp salt
1 cup old-fashioned oats
½ cup semi-sweet chocolate chips (plus extra for topping)
½ cup chopped peanuts or peanut butter chips (optional)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×9-inch pan or line it with parchment paper.
Step 2: Mix the Wet Ingredients
In a large bowl, combine melted butter and peanut butter.
Add brown sugar and granulated sugar; stir until smooth.
Whisk in the egg and vanilla extract.
Step 3: Add the Dry Ingredients
In another bowl, whisk together flour, baking soda, and salt.
Stir dry ingredients into the wet mixture until just combined.
Fold in oats, chocolate chips, and any optional mix-ins like chopped peanuts or peanut butter chips.
Step 4: Press and Bake
Spread the batter evenly into the prepared pan.
Sprinkle extra chocolate chips on top if desired.
Bake for 20–25 minutes, or until golden brown and set in the center.
Step 5: Cool and Cut
Let cool in the pan for 10 minutes before transferring to a wire rack.
Cool completely before slicing into bars.
