Ingredients

Scale

For the Pecan Pie Filling:

  • 1/2 cup chopped pecans – Toasted for extra flavor.
  • 1/4 cup brown sugar – Adds a deep, caramelized sweetness.
  • 2 tablespoons unsalted butter – For a rich and smooth filling.
  • 2 tablespoons heavy cream – Helps create a silky texture.
  • 1/2 teaspoon vanilla extract – Enhances the warm flavors.
  • Pinch of salt – Balances the sweetness.

For the Brownie Layer:

  • 1 box of brownie mix (or homemade brownies) – Choose a fudgy-style mix.
  • Ingredients required for brownie mix (typically eggs, oil, and water).

For the Chocolate Coating:

  • 1 1/2 cups semi-sweet or dark chocolate chips – For a smooth, rich shell.
  • 1 tablespoon coconut oil or vegetable shortening – Helps the chocolate melt smoothly.

For Garnish:

  • Extra chopped pecans – Adds a crunchy topping.
  • Drizzle of caramel sauce – Because why not?

Instructions

Step 1: Bake the Brownies

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the brownie batter according to package or homemade recipe instructions.
  3. Pour into a greased 9×13-inch baking dish and bake 5 minutes less than directed (to keep them extra fudgy).
  4. Let the brownies cool completely before cutting them into small squares.

Step 2: Make the Pecan Pie Filling

  1. In a saucepan over medium heat, melt butter and stir in brown sugar, heavy cream, vanilla, and salt.
  2. Add the chopped pecans and cook for 2-3 minutes, stirring until the mixture thickens slightly.
  3. Remove from heat and let cool until thickened but still scoopable.

Step 3: Assemble the Brownie Bombs

  1. Take a brownie square and flatten it slightly in your palm.
  2. Scoop 1 teaspoon of pecan pie filling into the center.
  3. Wrap the brownie around the filling, rolling it into a ball.
  4. Repeat until all bombs are formed, then freeze for 15-20 minutes to firm up.

Step 4: Coat in Chocolate

  1. Melt chocolate chips and coconut oil in the microwave in 30-second intervals, stirring until smooth.
  2. Dip each brownie bomb into the melted chocolate, coating completely.
  3. Place on a parchment-lined tray and sprinkle with chopped pecans.
  4. Drizzle with caramel sauce, if desired.

Step 5: Chill & Serve

  1. Let the chocolate set at room temperature or refrigerate for 15 minutes.
  2. Enjoy these gooey, chocolatey delights straight from the fridge or at room temp!

Notes

  • Use Fudgy Brownies – They’re easier to mold and keep the centers soft.
  • Chill Before Dipping – Freezing helps the brownie bombs hold their shape.
  • Choose Good Chocolate – High-quality chocolate makes a difference in taste and texture.
  • Make-Ahead Friendly – These can be made a day in advance and stored in the fridge.
