  • 2 pounds flat iron steak (or skirt, sirloin, or ribeye)
  • 2 green bell peppers
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 onion
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • Mexican melting cheese
  • Large tortillas
  • Avocado oil

Instructions

  1. Heat the griddle over medium heat. Sauté chopped bell peppers and onions until translucent (about 10 minutes). Remove and set aside.
  2. Season steak strips with salt, pepper, and garlic. Cook on the griddle for 6–8 minutes until browned.
  3. In a mixing bowl, combine soy sauce, brown sugar, garlic paste, ginger paste, and optional water. Mix well.
  4. Return cooked veggies to the griddle with the steak and pour in the sauce mixture. Cook until caramelized.
  5. Clean the griddle; drizzle avocado oil. Warm a tortilla on one side before adding cheese and filling on one half; fold over.
  6. Toast until golden brown on both sides. Cut into wedges and serve warm.
