Ingredients
- 2 pounds flat iron steak (or skirt, sirloin, or ribeye)
- 2 green bell peppers
- 1 yellow bell pepper
- 1 red bell pepper
- 1 onion
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- Mexican melting cheese
- Large tortillas
- Avocado oil
Instructions
- Heat the griddle over medium heat. Sauté chopped bell peppers and onions until translucent (about 10 minutes). Remove and set aside.
- Season steak strips with salt, pepper, and garlic. Cook on the griddle for 6–8 minutes until browned.
- In a mixing bowl, combine soy sauce, brown sugar, garlic paste, ginger paste, and optional water. Mix well.
- Return cooked veggies to the griddle with the steak and pour in the sauce mixture. Cook until caramelized.
- Clean the griddle; drizzle avocado oil. Warm a tortilla on one side before adding cheese and filling on one half; fold over.
- Toast until golden brown on both sides. Cut into wedges and serve warm.
