  • 4 tablespoons avocado or olive oil
  • 3 large yellow onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon Worcestershire sauce or coconut aminos
  • 4 cups beef stock
  • 10 ounces ribeye steak, thinly sliced
  • 4 slices provolone cheese
  • 1 1/4 cups shredded Gruyere cheese

Instructions

  1. Heat oil in a large Dutch oven over medium heat. Add onions and sauté until soft (about 12 minutes).
  2. Stir in butter and cook until onions are browned (about 10 minutes).
  3. Add Worcestershire sauce, garlic, thyme, bay leaves, salt, and pepper; cook for an additional 5 minutes.
  4. Deglaze with cooking apple juice and scrape any bits from the bottom.
  5. Pour in beef stock; bring to a boil then simmer for 25 minutes.
  6. In a skillet, heat remaining oil and sauté peppers for 5 minutes; add steak until cooked to your liking.
  7. Mix cooked peppers into the soup; discard bay leaves.
  8. Divide soup among ramekins; top with toasted bun pieces and cheeses.
  9. Broil until cheese is bubbly and brown.
