Ingredients

  • 2 Tbsp vegetable oil
  • 1 red bell pepper (thinly sliced)
  • 1 green bell pepper (thinly sliced)
  • 1 large yellow onion (thinly sliced)
  • 2 tsp minced garlic
  • 16 oz. shaved beef
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • ½ cup shredded provolone cheese
  • 2 cups Egg Beaters® Original
  • ½ cup grated Parmesan cheese
  • 1 cup sliced green onions

Instructions

  1. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Sauté the sliced red and green bell peppers along with the yellow onion until tender, about 5–7 minutes. Stir in minced garlic, shaved beef, kosher salt, and black pepper; cook until the beef is browned (about 5 minutes). Remove from heat.
  2. In a mixing bowl, whisk together Egg Beaters® Original with kosher salt and black pepper until frothy.
  3. In the same skillet, add another tablespoon of vegetable oil over medium heat. Pour in the egg mixture and cook undisturbed until edges set (about 3–4 minutes). Sprinkle half of the grated Parmesan cheese on one half of the omelet.
  4. Spoon half of the beef filling onto the cheese-covered side of the omelet, fold it over, and cook for an additional 2–3 minutes until cooked through. Slide onto a plate and repeat with remaining ingredients.
