  • ¼ cup diced pimento peppers
  • 4 Tbsp cream cheese (room temperature)
  • ¼ cup mayonnaise
  • ½ Tbsp lemon juice
  • ½ Tbsp chopped fresh chives
  • 3 Tbsp unsalted butter (softened)
  • 8 slices Texas toast or thick-sliced rustic bread

Instructions

  2. Spread the pimento cheese mixture generously between two slices of bread to form a sandwich. Repeat for remaining sandwiches.
  3. Heat a skillet over medium heat and melt butter. Place one sandwich in the skillet when the butter is sizzling.
  4. Cook each side for about 3–4 minutes until golden brown, pressing down lightly with a spatula.
