Ingredients

  • All-Purpose Flour (2 cups) – The base of the bread.
  • Baking Powder (2 tsp) – Helps the bread rise.
  • Baking Soda (½ tsp) – For extra fluffiness.
  • Salt (¼ tsp) – Enhances the flavors.
  • Sugar (¾ cup) – Adds sweetness.
  • Butter (½ cup, melted) – For a rich texture.
  • Eggs (2 large) – Helps bind the ingredients.
  • Vanilla Extract (1 tsp) – Adds warmth.
  • Crushed Pineapple (1 cup, drained) – The star ingredient!
  • Milk (½ cup) – Keeps the bread soft and moist.
  • Shredded Coconut (¼ cup, optional) – For extra tropical flavor.
  • Chopped Nuts (¼ cup, optional) – Adds a crunchy texture.

Instructions

Step 1: Preheat & Prep
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.

Step 2: Mix the Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Step 3: Mix the Wet Ingredients
In another bowl, whisk the sugar, melted butter, eggs, and vanilla extract until smooth. Stir in the crushed pineapple and milk.

Step 4: Combine the Batter
Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix! Fold in the coconut or nuts if using.

Step 5: Bake the Bread
Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.

 

Step 6: Cool & Serve
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!

Notes

  • Use Fresh or Canned Pineapple – Just be sure to drain well.
  • Don’t Overmix – This keeps the bread soft.
  • For a Sweeter Bread – Add an extra ¼ cup sugar.
  • Storage: Wrap tightly and store at room temp for 3 days or refrigerate for up to a week.
