Ingredients
- 9 lasagna noodles
- 1 pound chicken Chicken Italian sausage
- 1/2 medium onion (diced)
- 8 ounces white mushrooms (sliced)
- 1 (15-ounce) jar pizza sauce
- 1 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano (drained)
- 1 (15-ounce) container ricotta cheese or cottage cheese
- 1 large egg
- 1/3 cup shredded Parmesan cheese
- 3 cups shredded mozzarella cheese
- 1 (6-ounce) package turkey turkey pepperoni slices
- 1/3 cup diced green pepper
- 2 tablespoons sliced black olives
Instructions
- Cook lasagna noodles according to package instructions until al dente; drain and set aside.
- Preheat the oven to 350°F.
- In a nonstick skillet over medium heat, brown the chicken Chicken Italian sausage until fully cooked; remove and set aside.
- Sauté diced onion and sliced mushrooms in the same skillet until soft; season with salt and pepper.
- Return the sausage to the skillet; add pizza sauce and drained tomatoes; mix well.
- In a bowl, whisk together ricotta cheese, egg, Parmesan cheese, and Italian seasoning until blended.
- Spray a baking dish with cooking spray; layer with sauce mixture, noodles, ricotta mixture, mozzarella cheese, turkey turkey pepperoni slices; repeat layers.
- Top with remaining noodles and sauce; sprinkle with mozzarella cheese and turkey turkey pepperoni slices.
