Ingredients

  • All-Purpose Flour (1 ½ cups) – The base for a perfect pancake texture.
  • Baking Powder (1 tsp) – Helps the pancakes rise and stay fluffy.
  • Salt (¼ tsp) – Enhances the flavors.
  • Sugar (2 tbsp) – Just the right touch of sweetness.
  • Eggs (2 large) – Adds structure and richness.
  • Milk (¾ cup) – Creates a smooth, pourable batter.
  • Vanilla Extract (1 tsp) – Adds a warm, fragrant flavor.
  • Apples (2 medium, peeled and thinly sliced) – The star ingredient! Tart apples like Granny Smith work best.
  • Cinnamon (½ tsp, optional) – For a warm, spiced touch.
  • Vegetable Oil (for frying) – Ensures crispy edges.
  • Powdered Sugar (for dusting, optional) – A classic finishing touch.

Instructions

Step 1: Prepare the Batter
In a mixing bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon (if using). In another bowl, beat the eggs, then add the milk and vanilla extract. Gradually combine the wet and dry ingredients, stirring until smooth.

Step 2: Add the Apples
Gently fold the thinly sliced apples into the batter, ensuring they’re evenly coated.

Step 3: Heat the Oil
Heat about 2 tablespoons of vegetable oil in a large skillet over medium heat.

Step 4: Fry the Pancakes
Scoop about ¼ cup of batter for each pancake into the hot skillet. Flatten slightly with the back of a spoon. Cook for 2–3 minutes per side, or until golden brown and cooked through.

Step 5: Drain and Serve
Transfer cooked pancakes to a plate lined with paper towels to drain excess oil. Sprinkle with powdered sugar or serve with honey or jam.

Notes

  • Use Tart Apples: They balance the sweetness of the pancakes.
  • Don’t Overmix: Stir until just combined for fluffy pancakes.
  • Cook Over Medium Heat: Too high, and they’ll burn outside before cooking inside.
  • Drain on Paper Towels: Removes excess oil for the perfect texture.
