  • 250 g jumbo shrimp (peeled and deveined)
  • 300 g egg noodles
  • 1 tbsp garlic (finely chopped)
  • ½ onion (thinly sliced)
  • 1 carrot (julienned)
  • 1 bell pepper (julienned)
  • 3 spring onions (cut into 2" pieces)
  • 120 g bean sprouts
  • 2 tbsp light soy sauce
  • 4 tbsp oyster sauce
  • 1 tbsp sugar
  • Vegetable oil

Instructions

  1. Season the shrimp with salt and black pepper. Boil the dried noodles according to package instructions or use fresh egg noodles.
  2. In a large wok or frying pan over medium-high heat, add one tablespoon of oil and sauté the shrimp until pink (approximately 2–3 minutes). Remove from pan.
  3. Add another tablespoon of oil to the same pan. Sauté garlic for a few seconds before adding onion, carrot, and bell pepper; stir-fry for about a minute.
  4. Combine cooked noodles with the sautéed vegetables and pour in the prepared sauce mixture. Toss well for an additional 2–3 minutes.
  5. Return shrimp to the pan along with spring onions and bean sprouts; toss until evenly combined. Cook for another minute until heated through.
  6. Serve immediately and enjoy your flavorful chow mein!
