  • 4 cups diced pumpkin (with skin, seeded)
  • 1 small or ½ large fennel bulb, trimmed and diced
  • 1.5 pounds ground beef
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1 tsp dried marjoram
  • 1 tsp smoked paprika
  • ½ tsp chili flakes
  • salt (to taste)
  • black pepper (to taste)
  • 1 ¾ cups beef broth (or chicken or vegetable broth)
  • 1 bay leaf
  • 3 cups puréed tomatoes
  • 1 tbsp tomato paste

Instructions

  1. In a large heavy-based saucepan or Dutch oven, heat olive oil over medium-low heat. Add shallots, garlic, and celery; cook until softened (about 5 minutes).
  2. Add diced pumpkin; stir frequently for about 5 minutes. Incorporate fennel and cook for an additional 3 minutes.
  3. Raise heat to high and add ground beef; break apart with a wooden spoon. Lower heat back to medium and cook until browned (about 10 minutes).
  4. Stir in spices and seasonings along with beef broth and bay leaf; let simmer for about 10 minutes.
  5. Mix in puréed tomatoes and tomato paste; cover and simmer again for another 10 minutes until pumpkin is tender.
  6. Meanwhile, cook pasta in salted boiling water according to package instructions until al dente.
  7. Serve pasta topped generously with the Pumpkin Beef Bolognese sauce, finishing with dollops of ricotta and garnished with fresh thyme.
