  • 4 oz cream cheese (room temperature)
  • ½ cup pumpkin puree
  • 14 oz can sweetened condensed milk
  • 1½ teaspoons pumpkin pie spice
  • ½ cup gluten-free graham cracker crumbs
  • ½ cup white chocolate chips
  • ⅓ cup sugar
  • Dark chocolate chips (for garnish)
  • Optional: orange food coloring

Instructions

  1. Line a small baking sheet with parchment paper and set aside.
  2. In a medium saucepan over medium heat, melt together the butter, cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice.
  3. Once melted, stir in the graham cracker crumbs and white chocolate chips until fully incorporated. Add optional food coloring if desired.
  4. Cook until the mixture thickens slightly and pulls away from the sides of the saucepan; then remove from heat.
  5. Pour the mixture onto the prepared baking sheet, spreading it evenly. Refrigerate for 1 to 2 hours or until firm.
  6. Once chilled, slice into strips and roll each strip into balls, shaping them into pumpkins by flattening the tops slightly.
  7. Roll each truffle in sugar until coated and use a toothpick to create lines for texture.
  8. Top each truffle with a dark chocolate chip to mimic a stem.
  9. Serve immediately or refrigerate until ready to enjoy.
