  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/3 cup melted butter
  • 4 oz softened cream cheese
  • 1/4 cup powdered sugar
  • 3/4 cup canned pumpkin puree
  • 1/2 tsp pure vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 cup heavy whipping cream
  • 2 tablespoons powdered sugar (for whipped cream)
  • Chopped pecans for garnish

Instructions

  1. Preheat oven to 400°F. Use a cookie cutter to cut out rounds from each tortilla.
  2. Mix granulated sugar and cinnamon on a plate. Poke each tortilla with a fork to prevent air bubbles.
  3. Brush tortillas with melted butter, then dip in the cinnamon-sugar mixture.
  4. Shape the tortillas into taco shells by placing them over an upside-down muffin tin and bake for about 10 minutes until golden.
  5. Beat whipped cream ingredients until stiff peaks form. In another bowl, mix cream cheese and powdered sugar until smooth; add pumpkin puree, vanilla, and spices.
  6. Fill cooled taco shells with pumpkin filling, top with whipped cream, and garnish as desired.
