- 3 Boneless Skinless Chicken Breasts (diced)
- 2 tablespoons Olive Oil
- ½ Yellow Onion (diced)
- 1 Red Bell Pepper (cut into strips)
- 1 Green Bell Pepper (cut into strips)
- 1 Orange Bell Pepper (cut into strips)
- 1 Packet Fajita Seasoning
- 2 cups Minute Rice
- 2 cups Chicken Broth
- 8 ounces Tomato Sauce
- Gordos Cheese Dip
Instructions
- In a large skillet over medium-high heat, warm the olive oil and sauté the diced onions and bell peppers for about 2-3 minutes until they soften.
- Add the diced chicken to the skillet along with fajita seasoning. Cook for approximately 7-8 minutes until the chicken is fully cooked through.
- Stir in Minute Rice, tomato sauce, and chicken broth. Mix well and bring to a gentle simmer for about 2 minutes.
